A Wild Weekend…..

What a whirlwind weekend it was – one of the busiest in DUDEFOOD history! It started with catering a birthday party Saturday night and a full day of shopping and prepping beforehand. It was a long and busy day but the food came out great and everybody was happy and full when they left the birthday bash. The menu for Saturday’s birthday was:

CARAMELIZED ONION AND BACON DIP WITH HOMEMADE POTATO CHIPS

ARTICHOKE AND ROASTED PEPPER DIP WITH CRISPY PITA CHIPS

ROASTED CORN AND AVOCADO LETTUCE CUPS WITH LIME YOGURT SAUCE

MINI CARNITAS TACOS  WITH FRESH MADE SALSA AND CHIPOTLE CREAM

GRILLED SAUSAGE AND PEPPER PIZZA

CARAMELIZED RED ONION AND PROSCIUTTO GRILLED PIZZA WITH ARUGULA AND WHITE TRUFFLE OIL

SMOKED SALMON POTATO BITES WITH CAPERS, RED ONION, AND DILL YOGURT SAUCE

TRI TIP POTATO BITES WITH BALSAMIC CARAMELIZED RED ONION AND BLUE CHEESE SAUCE

The party was great, there were about 40 people enjoying the delicious variety of appetizers and you can be sure that everyone had plenty of food and good times.

Sunday was Fathers Day of course, and what did that mean for DUDEOOD? If you guessed cooking some great food for some great Dads you guessed it! This time it was a backyard BBQ consisting of a wide assortment of beef ribs, pork spareribs, and baby back ribs. The ribs were coated in a special blend of spices and seasonings and smoked low and slow until they were just about to fall off the bone. When the ribs were ready to eat guests had the option of slathering on DUDEFOOD’s original recipe chipotle BBQ sauce, which you can bet plenty of people did.

 It was a lip smacking, finger licking good time for all the dads who attended. Everyone went home full, and happy.

What a busy weekend for DUDEFOOD but we wouldn’t have had it any other way. We know we helped people throw some great parties by making sure their guests had plenty of good food to eat and the hosts didn’t have to worry about anything except having a great time. Now that summer is here there is no better time to throw a backyard BBQ or host a poker game for your friends. And there is no reason why you shouldn’t contact DUDEFOOD for all your party needs.

Breakfast Of The Week: Bacon Waffles

That’s right – Bacon Waffles. Not waffles with a side of bacon, but waffles with crispy bacon bits mixed into the batter. The inspiration came to me from an old family recipe that I of course had to tweak just a little to make my own.

I started by dicing up some bacon and browning it in a pan until almost crispy and then removed the bacon from the pan and let drain on a paper towel. I mixed up some of our favorite waffle batter mix and put just a little of the bacon drippings in the batter and mixed it thoroughly. This little step is to ensure you get that salty bacon flavor throughout your waffles.

After the waffle maker is preheated, pour about 1 cup of batter into it and sprinkle a handful of bacon on top of the batter.  Close the lid and cook for about 4 minutes until golden brown.

The waffles were delicious – crispy on the outside, plenty of that bacon flavor running throughout, and when you get a bite of waffle with one of those pieces of bacon let me tell you, you have never had such a wonderful breakfast experience.

These waffles have moved into the number 1 spot as our favorite breakfast item, and I’m sure that if you give them a shot you will love them, too.

The Kick Off Of Burger Week…..

Well, DUDEFOOD did it again! This time we kicked off Burger Week on Fox 40′s morning show with our Mexican Burger. The Mexican Burger is a creation of two of DUDEFOOD’s favorite things cheeseburgers, and mexican food. I created this burger a few years when a friend and I wanted to have burger cook off to be judged by our friends. Needless to say the Mexican Burger won in a landslide and it quickly became one of my favorite things to cook and eat.

What makes this burger so original and delicious is our mixture of ground beef and chorizo to make our patty and our homemade salsa fresca. It also doesn’t hurt to have avocado slices, melted jack cheese, and our original recipe chipotle mayo.

Dinner Of The Week: Crispy Turkey Tacos

You know how much I love Mexican food and we often add tacos into our weekly dinner rotation but we rarely to go to the trouble of making crispy tacos. But, with the rainy weather we have been having, we decided to stay in on Saturday night and fry up some fresh tortillas to make these tasty, crispy, treats.

CRISPY TURKEY TACOS WITH HOMEMADE SALSA FRESCA AND BLACK BEANS

To balance out the fried tortillas, we used ground turkey seasoned with onions, garlic, jalapeno, cumin and finished with fresh cilantro and lime juice.

The tacos were fantastic – crispy, and flavorful! We topped the tacos with a mixture of shredded jack and cheddar cheese, DUDEFOOD’s homemade salsa fresca which added even more delicious flavor (as if this taco needed it) and a little Greek yogurt in place of sour cream.

Who needs to go out to a Mexican restaurant when you can make these in the comfort of your own home?

Dinner Of The Week: Carmelized Onion and Spinach Turkey Meatloaf

Recently we had the opportunity to spend time with some friends and one of them said she doesn’t see enough of our Dinner Of The Week posts. So we promised to do more and to remind everyone that if you would like a recipe or have any questions about any of  our food posts drop us a line and we will get back to you ASAP. Annie this one is for you!

Meatloaf is one of my favorite meals to eat and of course I love making it at home and putting my own touch on it. Since meatloaf is a staple in our dinner rotation we like to try to make it a little healthier version than your Mom’s meatloaf.

For this version we used ground turkey to cut some of the calories and fat. In the past we have made more traditional turkey meatloaf with bread crumbs, celery, onion, eggs, and garlic. But sometimes traditional can be boring so I spruced it up a bit. This version has delicious caramelized onions and sauteed spinach.

CARAMELIZED ONION AND SPINACH TURKEY MEATLOAF WITH ROASTED VEGGIES AND SMASHED RED POTATOES

We started by caramelizing onions in olive oil over low heat for 30 minutes until they were sweet and dark brown in color and then added a few handfuls of spinach and combined just until the spinach is wilted. Let mixture cool and mix with your ground turkey along with some of our favorite seasonings. Once mixed thoroughly, form your meat into your favorite meatloaf shape and cook in a preheated 400 degree oven for about 20 minutes.

If sweet caramelized onions inside this meatloaf weren’t enough, instead of using boring old ketchup to top our loaf we used DUDEFOOD’s Original Chipotle BBQ Sauce to add a little zing to our turkey meatloaf.

Retiring in Style

Looking for a way to send a co-worker off in style?  Call Dude Food!  This week Dude Food was called to serve a variety of menu items at a retirement party.  We pulled out all stops, because 43 years of work deserves it! The guest list included a vegetarian and two gluten-free attendees, so both dietary restrictions were taken into account, and all items were labeled whether they were gluten-free and/or vegetarian.  Our goal is to be sure everyone leaves a DudeFood event satisfied, full, and well taken care of!
