Breakfast Of The Week: Chilaquilies

Breakfast is probably my favorite meal of the day and since Mexican food is my favorite type of food to eat I love to combine them both and make a meal that is a great start to any day. For this breakfast of champions I decided to make a delicious batch of chilaquilies.

You may be asking yourself, what are chilaquilies? Well, the easiest explanation is that they are breakfast nachos. You start with a bed of tortilla chips, cheese, salsa and place in a hot oven to heat everything up together and melt the cheese. Then you top this tasty pile with a runny egg and enjoy!

For this batch you know I had to make it my own so I added some black beans and roasted corn that we had left over from a dinner earlier in the week. And of coursem no breakfast dish is complete without crispy and delicious bacon. Also,there are also some fresh avocado slices on the side. When you make this dish you can use any good quality salsa you like, I love salsa verde so that’s what we used. And of course you can’t have a Mexican dish with out sour cream on the side.

Not Your Normal Meatball Sub…

If you know anything about me you know that I love a good sandwich and I love to create new versions of some of my favorite sandwich recipes. One of those such recipes is a meatball sub. Making meatballs are terrific because you can use them in many different ways like pizzas, subs, and of course in pasta dishes.

Recently I got to thinking of some new ways to make a meatball sub and I came up with this masterpiece

LAMB MEATBALL SANDWICH

That’s right I used fresh ground lamb, and a fresh ciabbata roll  bought at our local farmers market to make something pretty special. In the meatball mixture there was onion, garlic, dijon mustard, panko bread crumbs, one egg, and a blend of some special seasonings and they were lightly mixed together to form golf ball sized flavor explosions.

If the meatballs were not good enough the sandwich came complete with fresh baby spinach, very thinly sliced onion, diced tomatoes, feta cheese and last but not least a delicious homemade tzatiki sauce.

Dinner Of The Week: Vegetarian Style

Recently one of the members of the DUDEFOOD family decided to give up meat for lent so that made dinner planning a little more interesting since there were meat eaters and non meat eaters under the same roof. We have come up with some ways to make everybody happy without having to make two separate dinners for everyone.

One of those such dinners are PEPPERS STUFFED WITH MUSHROOMS, ZUCCHINI, TOMATOES, SPINACH, FETA CHEESE, AND ISRAELI COUSCOUS. These peppers were topped with panko bread crumbs to give them a little crispy texture when cooked in the oven. They were packed full of flavor and even though there was no meat they were quite filling. For the meat eaters we used ground pork and served the peppers with crispy roasted potatoes and mustard yogurt sauce.

While I know that I am no vegetarian, I have to admit that it is fun trying to create new recipes that don’t contain meat from some of our favorite recipes that we use for our nightly dinners.

Product Review: Trader Joe’s Breaded Cod Filets

The DUDEFOOD household was craving fish tacos recently and thought these Trader Joe’s Breaded Cod Fillets would be a quick and easy alternative to making our own breaded fish at home. You know what? We were right, the fillets cooked in about 25 minutes and were crispy and flavorful when finished.

These cod fillets were perfect for our fish tacos because they were perfectly sized plump pieces of fish that stayed crunchy even covered in tasty taco toppings. Our tacos consisted of avocado, chipotle cream, lettuce, cheese, black beans, and tomatoes.

These cod fillets get the DUDEFOOD seal of approval so they will definitely be involved in our dinner rotation. I think next time we might use them for some fish po’ boys. Stay tuned for that dinner of the week post.

Just in Time For St. Patricks Day: The Hangover Helper Breakfast

St. Patricks day is the perfect time to share a breakfast with you that is sure to help cure your hangover. I know some times after a night of celebrating your Irish heritage the last thing you might want to do is eat something but if you partake in a breakfast like this you will be back to your old self in no time.

What is this miracle hangover cure? How does home fried breakfast potatoes, chorizo, zesty salsa, and topped with a perfectly poached egg sound? Pretty good right? You might call this tasty dish Huevos Rancheros but whatever you call it the people who eat it will surely call it delicious. That’s what we serve in the DUDEFOOD household when someone has had one to many adult beverages the night before.

Fox 40 Recap…. The Bacon Edition

If you missed it DUDEFOOD was invited to do it’s third on air cooking segment on FOX 40 recently. This time unlike the first two appearances this was to be a themed segment. What was the theme you might be asking? Well, bacon of course. That’s right, we were asked to kick off FOX 40′s bacon week and we think we got it off to a great start. Our bacon menu included

Usually when we prepare food for any type of event we like to get some pictures but this   was the only one because as soon as the segment was over the crew dove in and started to enjoy our tasty, bacony treats. We will take that as a good sign of making food that people want to eat.

DINNER OF THE WEEK: CHICKEN SAUSAGE PIZZA WITH CARMELIZED ONION, SAUTEED SPINACH AND CHERRY TOMATOES

One of the most popular things to eat in the DUDEFOOD household are pizzas. They are quick, easy, and can be made with just about anything you have laying around in the fridge.

This weeks pizza was a tasty creation of sweet chicken sausage on a bed of caramelized onions and sauteed spinach. The pizza looked great before I cooked it but it needed a little additional color so I cut some orange, yellow, and red cherry tomatoes in half and threw those on top and baked it in the oven until the mozzarella cheese was melty and the whole wheat dough was nice and crispy.

DINNER OF THE WEEK: CHICKEN CORDON “DUDE”

CHICKEN CORDON "DUDE"

Dinner this week is a take on the classic dish Chicken Cordon Bleu. The original is a chicken stuffed with ham and swiss cheese then breaded and cooked in the oven. How did DUDEFOOD make this into an an original? Well, we stuffed it with pastrami and havarti and covered it with a creamy and cheesy sauce.

This dinner goes to show you how you can take a recipe and make it your own and have some fun while your at it. The dinner was delicious and it earned rave reviews in the DUDEFOOD household and it’s sure to be a staple in our weekly dinner rotation.

To go with our Chicken Cordon Dude we served up some tasty sauteed brussel sprouts and mushrooms, and some crispy potato wedges.
