There is nothing better on a cold and rainy Saturday afternoon than a nice, hot bowl of chili. And if you add a great football game and some good friends you have quite a nice little afternoon. This past weekend, DUDEFOOD was asked by a friend to whip up a batch of chili and watch the LSU vs. Alabama game with some friends.
Usually DUDEFOOD’s go-to chili dish is Chili Verde with tender shredded pork and a mix of roasted peppers, but this time I decided to go a little outside of the box and come up with an all new creation. This batch of chili was a combination of a Texas chili with beans and something with a south of the border flair.
To accomplish the flair we used one of our favorite ingredients, chorizo! This chili was packed with flavor from the chorizo, chipotle, and ancho chile spices. To add that essential meatiness that all chilis must have, we added a hefty amount of tender, diced pork that was cooked low and slow along with black and pinto beans, onions, garlic, diced tomatoes, and beef broth. The finished product was just spicy enough to warm you up on a cold, fall afternoon. Not to mention it was delicious! Each tasty bowl was topped off with shredded cheese, sour cream, and diced green onions.
