Breakfast Of The Week: Carnitas Hash

Hopefully you had a chance to see DUDEFOOD Friday morning on the Fox 40 morning show, we were kicking off football season by making an easy carnitas recipe and using that carnitas for some tasty treats likes tacos, sliders, and a carnitas pizza with fresh made salsa and chipotle cream.

It was great to be on live T.V again and the best part of it was all the left over carnitas we brought home. The big question was what to do with it? I decided on Sunday morning that before the football games started I would make carnitas hash. I rummaged through the refrigerator and found red bell pepper, onion, garlic, jalapeno, and some red potatoes. I diced all those ingredients up and cooked them in a cast iron skillet until the potatoes were crispy and then added the carnitas. At the very end I added chopped cilantro and made sure everything was cooked and mixed thoroughly.

I knew the hash was going to be great but I knew it needed a nice runny egg on top so I poached one and placed it on top of this pile of goodness. If that wasn’t enough there was also some chipotle cream and delicous, creamy, queso fresco.
